Mike Cosse was born and raised in New Orleans, LA. Mike started his career as a commercial shrimper at the age of 13. Mike 's love for seafood continued to grow throughout his life and eventually Mike went to Culinary School at Delgado College in New Orleans, LA. After graduating from Delgado College he did a 3-Year Apprenticeship with Maurice Fitzgerald, Louisiana's first Accredited Chef. Mike specializes in French Cuisine due to his strong Louisiana roots and love for the Crescent City.
